Exciting news!
First, I got promoted into management at work! I'm beyond excited and I can't wait to start training which I can't start until the next pay period begins at the end of the month. Fiiiiinaly I'll be putting my degree to good use!
Second, I'm going to NY at the end for a week and a half and I can't wait. It kinda falls in the middle of my training, so I'm starting basic stuff before I leave and then getting into everything else when I come home. So far we have 2 plays and this girls night out event planned.
Finally, I'm super excited to announce that I'm officially selling Scentsy. Scentsy is a safe, wickless alternative to candles. Unlike candles which are obviously melted by a flame, a Scentsy warmer is heated by a light bulb so the wax is never burned just heated. Scentsy doesn't stop at wax and warmers, they also sell room sprays, hand soap, travel tins, car air fresheners, scent paks, and stuffed animals. There are SO many different styles of warmers to choose from in two sizes plus the scents are out of this world! Also their combine and save deals are really incredible. I joined because I really could use some extra cash and I fell in love with the products. I'm looking to host my first party when I go to NY and I have a coworker who wants to host a party. I super pumped!

Clearly I found this on Pinterest... hellllooooo I'm obsessed! I check it way more often than FB and Twitter, which is pretty bad! I really really want to participate in a 5K sometime in my life. I'm in no shape to run it now, but walking would definitely be possible and even some jogging. The Color Run looks like SO much fun!! I can only imagine how awesome the "white" shirts look when you're done. I'm definitely going to look into doing the DC or NYC run!

It's really irritating to see someone who graduated with a general education degree get the kind of jobs " should be getting with my degree. It's even more irritating having to hear if that person should ask for $40-45,000 or $45-55,000 during their interview tomorrow.
I'm all for being happy for people and it's really awesome that there are opportunities out there like that, it's just frustrating to live in this area where there really is nothing for me but I don't have a choice because of the car and student loans I have. Some day's I wish I would have gone to school for another degree because there is a much higher chance I'd have a job using that degree. On the other hand, I LOVE the business world and I loved every single class I took in college and I wouldn't change a thing. It's just crazy frustrating to spend all that time in school and have a degree that's basically useless.

For the same Christmas party, I also baked S'more Brownies which I found on Pinterest. These were INCREDIBLE!! They're perfect when they're still fresh and warm but still last pretty well for a couple days.
With any recipe, I've of course altered it. I used a 9x13" and one box of mix barely covered half my pan, so I had to make a second mix. I also cooked the brownies til they were basically finished, added the topping and then cooked it for an additional 10-15 minutes or until the marshmellows browned.

Ingredients
- 1 (21.5 ounce) package brownie mix
- 6 graham crackers
- 1 1/2 cups miniature marshmallows
- 8 (1.5 ounce) bars milk chocolate, coarsely chopped
Directions
- Preheat oven to 350 degrees F (175 degrees C). Prepare brownie mix according to package directions. Spread into a greased 9x13 inch pan.
- In a medium bowl, break graham crackers into 1 inch pieces and toss with miniature marshmallows and milk chocolate. Set s'more mixture aside.
- Bake brownies for 15 minutes in the preheated oven. Remove, and sprinkle the s'more goodies evenly over the top. Bake for an additional 15 to 20 minutes, or until a toothpick inserted in the center comes out clean. Allow brownies to cool before cutting into squares.

It's this amazing website where people "pin" things they find all over the internet for other people to find. I'm addicted. I have SO many boards made of things I like or want to try.
These were super easy to make and even easier to cut into bars. I wish I would have tried them before putting icing on top. The brownie itself was very sweet, in my opinion, so adding the icing was going really over board. I knew they weren't such a great hit because I ended up dropping off most of the platter at work.
I used a french vanilla cake mix and added red and green sprinkles to it. I also used can frosting, which I tend to like more than homemade frosting. I also baked this in a 9x13" because I needed to get more out of this, by doing so I used 2 boxes of cake mix and doubled everything. Since I used 2 boxes and a larger pan, it took much longer than 30 minutes to cook. The only advice I can give is to check the brownie with a toothpick and cook at 10 minute increments after 30 minutes.

Spray pan (either 8x11" or 9x9" pan ) with non-stick cooking spray. Dump batter in pan and spread to the edges. Bake for 25-30 minutes at 350 degrees. (They will be a little soft/gooey in the middle- just let them sit for about 20-30 minutes and they will set up. But I guarantee that you will not be able to wait that long.) Frost when cooled if desired.

Tonight for dinner I made chicken rolls with buffalo, barbeque, and teriyaki. I've tried them once before using spring roll wrappers not knowing that they would never crisp up. This time I used egg roll wrappers and it worked perfectly! Considering I'm still living with my parents, they typically make dinner every night and I know they get tired of it, so I'm trying to find new things to make instead of the usual dinners consisting of chicken/pork/beef/turkey.
This was SUPER easy! I'm not ashamed to admit that the only part I couldn't do was actually cook the chicken, I left that up to my mom. I can't touch raw meat. If I have to do something with raw meat, I use a fork to avoid touching it. After the chicken was cooked on the stove, I shred the chicken and mixed it with some sauce: barbeque, buffalo or teriyaki.
Then, I laid out the egg roll wrappers on the counter and in the center I placed a nice spoon full of chicken on top. I also put a pinch of shredded cheddar cheese on top of the chicken.
Next, you bring up the bottom and fold the sides in. Before folding the sides in, you need to wet the corners for them to stick to the roll.
Wet the top of the wrap before folding it down, like an envelope.
Finally, it says to spray them with cooking spray or brush oil on them and pop them into a 400 degree oven for 15 minutes. I kept them in there for an extra 5 minutes because I felt like they weren't brown enough.
They turned out really really good. They would be perfect for a party to be picked on before the main meal. I would definitely do a few things different in the future. I think I might have used too much chicken in them and that's why they didn't roll but laid out flat. They definitely need something other than cheese added. Also, I felt like I was putting SO much sauce on the chicken but when we went to eat them you could barely taste it. So, definitely add more sauce than you think they need. The egg roll wraps are good for up to 2 months in the freezer, so we're going to freeze the rest and bring them out next month to try with something else. My mom suggested ground beef with cheese or pulled pork with coleslaw and cheese.

Today is officially the last day of NaBloPoMo for November. I had good days and I had bad days, but I posted atleast once everyday and that's all that matters. I'm super proud of myself! For the month of December I'm not going to do NaBloPoMo, but I am going to continue posting. I'm hoping for 3/4 times a week, but if I can only get one post in than it's better than nothing. I may or may not have any readers and that's fine with me because I did this for myself. I proved to myself that I could sign up to do something everyday and actually come through with it.

I'm thankful for every one in my life, past and present. I'm thankful for a roof over my head, food on the table, and clothes on my body. I'm thankful for having a job despite complaining about it day in and day out. I'm thankful for my education and having the opportunity to pursue higher education.
